Lazy Saturdays and Blueberry Pancakes

Lazy Saturdays and gluten free blueberry pancakes are the best.  It seems like lately (i.e. the last 15 years or so) I don’t get lazy Saturdays often.  I’m always traveling on the weekends.  Or I’m home and working through a massive to-do list on weekend mornings.  And I very rarely get the time (or inclination) to sleep in.  Or at least not on a day where I can actually do it.

Dan over at Points with a Crew apparently was NOT sleeping in this morning.  I’m thinking that having six kids might have something to do with that!   We did an interview earlier this week which he posted this morning.  Hop over to his blog if you are interested in learning a little bit about me.  And for friends with kids, Dan has all kinds of cool ideas of how to take your family on cool vacations without spending a ton!

Today I didn’t have my first appointment until 2:30 and had no pressing errands to run.  I finally got up when I realized I wasn’t going to fall back asleep.  Instead I hit the kitchen to make my gluten free blueberry pancakes.

I love making pancakes but haven’t done much of it since trying to cut down on my wheat consumption.  I’ve decided to check out gluten free mixes to see if I can find one I like – this one made light and fluffy gluten free pancakes.

The key to getting blueberry pancakes to hold together is to pour the batter first and then as the bubbles start slowing on the front side to press the blueberries in.

And then flipped – beautiful pancakes!

This same blueberry pancakes trick works with other add-ins too.   You can use bananas, strawberries, chocolate chips, bacon.  It is a great way to spice up weekend breakfast.  It’s also a fun way to let kids help in the kitchen.  They can even create their own designs like smiley faces.  Just be sure and watch them near a hot griddle!

  1. Yes, even accounting for the 1 hour time difference between us, I was up quite early and yes, it was due to the kids 😛

    Actually someone was picking me up to go somewhere at 8:45 a.m. so I would have been up early anyways, but….

    My wife likes to talk about being a kid and her and her brother waking up early on Saturday mornings to watch cartoons and how they were SO quiet so as to not wake up their parents. And now we wonder, were they really as quiet as they thought they were? Or did their parents just have a better way to ignore them… 🙂

    1. I feel like I was pretty quiet as a kid. I’d go downstairs and have whatever junk cereal that I was only allowed to eat on the weekends and watch cartoons. I think the television was better back in our day….
